Assistant Meat Lab Manager

Job Summary

The Assistant Meat Lab Manager will be responsible for fulfilling the research, teaching, and outreach activities of the Department. In addition, this individual will have responsibilities for the day-to-day operations of the Purdue Meat Laboratory. Additional duties will include but are not limited to:

 

  • Harvesting, Fabrication, processing, distribution and retailing of meat products
  • Assisting with research projects, extension programs and teaching activities
  • Performing, creating, documenting and maintaining operational employee and food safety system
  • Fulfilling USDA (FSIS)/State inspection, HACCP and SSOP requirements
  • Performing, assisting and guiding in the Humane Handling of Livestock, Harvesting of Livestock and Poultry, as well as the Carcass Fabrication, Processing and Sanitation Activities within the Land O’Lakes Center
  • Operating and maintaining all equipment, tools and facilities within the Land O’Lakes Center
  • Assisting in the training and supervision of undergraduate and graduate students
  • Maintaining a clean and safe facility
  • Operation and maintenance of specialized equipment

Required:

  • Bachelor degree in Animal Science, Meat Science or related field
  • 1 year of experience handling, harvesting and processing livestock and poultry
  • In lieu of degree consideration will be given to an equivalent combination of related education and required experience (Associate's degree + 3 years of experience; High School diploma/GED + 5 years of experience)
  • Ability to obtain HACCP certification within first year of employment
  • Must have a proven record of ability to efficiently generated high quality shelf ready meat using knives and butcher equipment
  • Ability to frequently lift over 80lbs
  • Ability to work in extreme cold for extended periods
  • Basic Computer Skills using Outlook, Excel, Google Docs, etc.
